It would not be the season of Fall without the sights, smells, and tastes of pumpkin! Pumpkin is a hearty savory vegetable chock full of vitamins, minerals, and fiber. This humble veggie is actually one heck of a superfood!
I am all for the savory deliciousness of pumpkin and crave it myself during Fall. It seems once October hits everywhere you turn pumpkin flavored drinks and foods are in your face. BUT BEWARE……. and WATCH OUT for these brilliantly marketed treats and drinks.
Most of these “foods” and drinks out there do not contain any pumpkin at all. Surprise surprise your favorite pumpkin flavored latte or muffin contain hardly any if at all REAL pumpkin. Sadly these foods and drinks marketed are just again processed fake foods and artificial flavors disguised to look delicious and most of all crave-able!
So what are we the consumer to do? We just want a little pumpkin spice to cozy up with on a crisp fall day, right! ? Here are some of my favorite recipes to get my pumpkin craving fulfilled while still being healthy and REAL!
Pumpkin smoothie
½ cup plain pumpkin puree (I use the brand )
1 cup full fat coconut milk
Dash of nutmeg
Dash of cinnamon
½ avocado (for thickness)
1 scoop plain grass fed whey protein powder
Ice
Blend and enjoy!
Pumpkin soup
1 can pumpkin puree
1 cup full fat grass fed cream
Few dashes of nutmeg
Dash of cinnamon
Salt
2-4 Tablespoons maple syrup
Sprouted pumpkin seeds
Warm all ingredients in a pan on the stove and stir until well blended together, serve topped with a handful of pumpkin seeds, enjoy!
Pumpkin pancakes
Add ½ cup of pumpkin puree to any Gluten Free pancake mix ( I use Pamela’s brand), cook as usual.
Pumpkin muffins/bread

And how could I forget the Pumpkin Latte!
Here is my healthier version 🙂
1 cup organic coffee
1-2 Tablespoons pumpkin puree
A few shakes of cinnamon
2 tablespoons coconut oil
2 tablespoons full fat cream
Mix up in mason jar with a hand blender or put in regular blender until a little foam forms on top. Pour hot into coffee mug…………sip, enjoy!!!!
