I like to make my stew around lunch time and simmer for an hour then I turn heat off and keep it covered on stove.   The pot stays warm for quite some time and at the dinner hour I turn on low to warm up a bit , then serve.

I serve this stew topped with shredded raw cheddar cheese and raw pumpkin seeds!

Here’s hoping this superfood stew will keep you warm and healthy all winter long!

Be Well!
