It’s officially winter here in Michigan snowy, cold, and gray! Christmas is just around the corner and I have an easy one pot recipe that’s great to keep on the stove for company stopping in or an easy lunch /dinner option.  Its full of amazing superfood ingredients that are sure to keep your immune system working in tip top shape as you get through the Holidays and New Year – plus its YUMMY!

Super Easy Superfood Winter Stew

Ingredients

1 pound organic pastured ground turkey or beef (I use turkey in this recipe)

1 TBSP organic ghee

1 sweet potato

1 onion

6 cloves garlic

1 red or yellow pepper

1 24oz glass jar of organic strained tomatoes (I use the brand Bionatura)

½ can bpa free black beans (I use the brand Eden Organic)

apple cider vinegar

cumin

tumeric

chili powder

sea salt

Food processor, vitamix, or blender

Dutch oven pan

Add ghee and turkey or beef into pan and brown until no longer pink

 Add 2-3 TBSP chili powder, 1 TBSP cumin, 1 tsp tumeric, 1 TBSP apple cider vinegar and generous sprinkle of sea salt to your liking.

IMG_2822-150x150 Super Easy SUPERFOOD Winter StewStir stew and bring to a boil, then cover and simmer for 30 minutes until veggies are cooked.  At this point its ready to eat but the longer you leave it sit the more flavorful it becomes.

I like to make my stew around lunch time and simmer for an hour then I turn heat off and keep it covered on stove.   The pot stays warm for quite some time and at the dinner hour I turn on low to warm up a bit , then serve.

I serve this stew topped with shredded raw cheddar cheese and raw pumpkin seeds!
