Parsley is credited with all kinds of health benefits. Its a great herb to add to many dishes and even better eaten raw in a salad. Its easy to grow and most people enjoy the taste.
Eating more parsley can be beneficial to overall health because its loaded with high levels of vitamin C, Vitamin K, Vitamin A, folic acid, iron, calcium, and magnesium. It has anti-inflammatory and antioxidant properties that are know to boost liver health, and maintain a good immune system.
So how can you get more of this superfood herb into your diet?? Well with my delicious quinoa taboulli recipe thats sure to please! This salad is also loaded with protein from the quinoa and healthy fats from avocado and olive oil. Try this instead of your typical salad for something different!
Quinoa Taboulli
1 cup cooked quinoa
3 cups chopped curly leaf parsley
1 whole cucumber skin on cut up
½ diced tomato
¼ cup diced red onion
1 avocado diced up
1 whole fresh squeezed lemon
3 TBSP extra virgin olive oil
1 tsp sea salt (or more if needed)
Whisk together olive oil , lemon juice, and salt in the bottom of a big bowl. Add remaining ingredients and toss lightly to coat.

Hummus recipe is 1 can bpa free garbanzo beans ( i use Eden Organic) , 2 garlic cloves, 1/2 cup olive oil, 1 fresh lemon juiced, 2 tablespoons organic tahini, blend in food processor or vitamin until smooth add more olive oil if needed! Kefir smoothie recipe is 1 cup raw kefir, 1/2 cup frozen berries, 1/2 banana, 1 scoop organic plain grass fed whey protein powder, 1 tablespoon coconut oil or 1/2 avocado – blend until smooth! have a great day!
