This Easy Curry Lentil Soup will warm you up from head to toe while providing a ton of health benefits!
Lentils are high in protein, stabilize blood sugar, and are high in insoluble fiber which is fabulous for digestive health!
Curry powder adds a kick to this soup and provides an array of vitamins and minerals. The coconut vinegar adds a sweet tang to balance it all out plus added nutrition like probiotics, vitamins, minerals, and amino acids.

Curry Lentil Soup
3 large whole colored carrots
3 celery stalks
5 garlic cloves
1/2 onion
1 green pepper
1.5 cups cooked lentils
1 tablespoon ghee
4 cups organic bone broth
3 tablespoons curry powder
a good few shakes of mineral rich sea salt to taste
1 tablespoon coconut vinegar
In a food processor pulse the veggies (except lentils) until finely diced. In a large pot melt the ghee and saute the veggies about 5-10 minutes until soft then add in Lentils. Next, add in broth, curry powder, sea salt, and coconut vinegar. Bring to a boil then simmer for 30 minutes. Done!
