Bye bye gross fried chicken tenders…hello crispy crunchy “breaded” grain-free good for you chicken tenders! Yup, you heard that right! I posted these on my Instagram and they were a HIT!!!
.
.
I used gluten-free toasted crumbs made from organic chickpeas! Full of fiber & high in protein they make this dish a double winner! Here is how I made these beauties up! 👍🏻

Recipe
Pastured chicken tenders (1-2 pounds)
Balsamic Dressing (Primal Kitchen)
1 bag Chickpea crumbs
Garlic salt
Parmesan cheese
- Dump chicken and balsamic dressing in a large ziplock bag and marinate for 3-5 hours
- Next in a separate bowl add crumbs, parmesan cheese, and 1 tablespoon garlic salt mix together
- Dip chicken tenders one by one into crumb mixture then lay in glass baking dish side by side
- Bake 350 for 30 min total. Around 20 min mark drop a pat of REAL butter on top of each chicken tender (this helps to brown and crisp up nicely)

MARINATE CHICKEN IN BALSAMIC DRESSING

ADD CRUMBS, GARLIC SALT, AND PARMESAN CHEESE AND MIX

DUNK CHICKEN IN CRUMBS AND LAY IN GLASS BAKING DISH

ALL DONE! SO CRISPY!
Enjoy!
Be Well 🙂
