The holiday baking season is officially upon us!  Cinnamon is a popular spice that flavors MANY holiday favorites such as gingerbread, pumpkin pie, and even cinnamon rolls.  But did you know that Cinnamon is incredibly healthy for us maybe even a superfood spice! Vietnamese-Vietnamese cinnamon has a distinctly sweet flavor and an exceptionally high volatile oil content. Gourmet cooks rate it as the highest quality cinnamon in the world.

Ceylon-Ceylon cinnamon is subtle, has a delicate and nuanced flavor, smells very mild and is slightly sweet.  This cinnamon is native to Sri Lanka.

Korintje-Korintje is most commonly used in commercial bakeries and has an intense reddish-brown color and sharp cinnamon flavor; korintje gels with water making it perfect for sticky buns.
