Citrus Herb Chicken
Preheat oven to 400 degrees F.
1/2 cup olive oil
3 cloves chopped garlic
1/2 cup fresh lemon juice
1 tablespoon Italian seasoning
1 tsp paprika,onion powder,salt & pepper
1 sliced lemon or orange
*In a small bowl whisk together olive oil, garlic, lemon juice, Italian seasoning, paprika, onion powder, and salt and pepper.
* Place whole chicken in a roasting pan with lid. Pour olive oil mixture all over chicken, coat all sides. Arrange slices of lemon or orange around top and under the chicken. Sprinkle all over generously with thyme, rosemary, salt and pepper.
* Bake covered for about 1 hour, or until chicken is cooked and juices run clear. Remove and cut then place on a serving platter and garnish with additional chopped fresh herbs, if desired.
